Soft Stand-Mixer Hamburger Buns
Soft yet sturdy homemade hamburger buns made with bread flour and instant yeast, shaped wide enough for burgers and kneaded with a stand mixer.
Method
-
Mix the dough
Fit the stand mixer with the dough hook. Add the bread flour, instant yeast, sugar, and salt to the mixer bowl and mix briefly on low speed. Add the warm milk, egg, and melted butter. Mix on low speed for 2 minutes, until a shaggy dough forms.
-
Knead
Knead on medium-low speed (speed 2 on a KitchenAid) for 6 to 8 minutes, until the dough is smooth, elastic, and slightly tacky. It should mostly clear the sides of the bowl. Add bread flour 1 tablespoon at a time only if the dough remains very sticky after several minutes.
-
Let it rise
Transfer the dough to a lightly greased bowl, cover, and let rise in a warm place for 60 to 75 minutes, until doubled in size.
-
Shape the buns
Line a baking sheet with parchment paper. Gently deflate the dough and divide it into 8 equal pieces. Shape each piece into a tight ball, place it seam-side down on the sheet, and flatten it into a disk about 3 1/2 to 4 inches wide.
-
Proof again
Cover loosely and let rise for 30 to 45 minutes, until noticeably puffy. Meanwhile, heat the oven to 375°F.
-
Wash and top
Brush the buns gently with the egg wash and sprinkle with sesame seeds, if using.
-
Bake
Bake for 15 to 18 minutes, until evenly golden and baked through. Transfer to a rack and cool completely before slicing.
